I think the maroon shirt, white pants, maroon helmet should be the default uni. But, I don't see a problem throwing in a white helmet and uni for a game or going all maroon with gold highlights for the EB. That interlocking logo in gold on a maroon helmet would be awesome.
I liked the flying-M throwbacks too. That would be good for homecoming or something like that. Not as a permanent logo though.
