When your OLine gives you time you can do good. One thing good is he didn't panic when the pocket collapsed but he stepped up and found the open guy.

Why not give the coaches some credit for developing him to the point he can help them now. That is just as likely if not more likely to be how it went down rather than he wasn't starting the best QB. Kellen Moore may or may not should have put him in sooner, there is no way for us to know without being at practice to see how that new guy was actually performing or was running the offense.
Coaches do screw it up a lot when it comes to picking the starter, especially at QB. Why? It's freaking hard to figure out. The love the best athletes just like we do, tallest, biggest arm, fastest but that simply does not translate to the best QB. Sure those guys are better if all other things are equal but they aren't. Some guys can just get it done on game day and others can't.
And he didn't make stupid mistakes/

In the NFL, the best players do not play.
The players are played are the ones that are getting paid. So, no matter how much better you are than the guy ahead of you, you ain't playing if he is getting paid.
This ain't coming from just the HC. That is how it's going to be or you don't become a HC in that league.
He's playing behind an absolutely horrid oline, but he's still making plays. He's faced 3/5 teams with winning record on the road, and he actually led the saints to wins in 2 of them. The falcons game was a stinker, but the kicker cost them a shot to be in it late. Olave let the go ahead td go through his hands late in the 4th quarter vs the dolphins, who are actually playing great lately.
The saints need to fix the oline in FA this offseason and get Tyson or Tate in the first round. Shough has at least earned a 2nd season as a starter
I would agree that guys getting paid are going to be given a chance and guys like in your scenario with high ceiling talent are going to be given a chance to prove or fail. But I still do not believe that, as a general rule, coaches choose not play the players they think give them the best chance to win.

core (shough, vele, banks, Olave, johnson, young, Riley, and sanker) is making plays is different. I want us to finish well on those guys' backs... attracting FAs will be much easier
I'd just prefer us lose, not tank, but still lose. We can be competitive and have fun games, but it will do us no good picking 8-12 in the upcoming draft, especially with Mickey drafting. Thankfully we'll get Demario, Cam, and Taysom's contracts off the books. Hopefully we move Kamara as well while he still has some semblance of trade value. That should give us a little money to be able to spend in FA. That will escalate the rebuild. I'm still not completely sold on Shough though. And maybe that's because I'm looking at it through the lens of Brees. I just have to lower my expectations that Shough is going to be anything close to that. If he could be like a Kirk Cousins that would be good.
A lot of coaches will sacrifice the early season schedule to see what they have. They'll risk a game or two to give the "high ceiling" guys a chance to settle in while steady Eddie sits over on the sideline waiting for them to blow it. Happened 100's of times at every level.
I feel like Lebby did the opposite this year and sat KT while steady Eddie played the majority of the season. And I think giving KT a chance to mature and develop before throwing him in the deep end was the right move.
I expect the Saints to draft all offense and fill spots through FA to help Shough. They won't have the top pick and even if they do, I hope they trade down and go for value rather than take someone in the #1-3 spot. I just don't see a lot of top end offensive talent in this draft that would help the Saints. We need to totally retool the offense imo. Kamara is one of my all time favorites, but I suspect we'll be looking to unload some of our higher paid skill guys.
