View Full Version : OT: Need some help in identifying a type of knife

Trying not to wait until Christmas Eve to find my wife something for Christmas and have hit a roadblock. She loves to watch those cooking shows and many times when they are chopping onions, peppers, etc., I see them using some kind of knife that has a rather pronounced curved blade that allows them to just rock the knife back and forth instead of the more traditional chopping method. Does anybody out there with some culinary experience know what that kind of knife is called? Just putting kitchen knife into google or amazon turns up more results than I have time.

That is close but the ones I have seen have a much more pronounced curved blade than that.

Depending on which knife you get, they will vary on the curvature of each one. Good knives btw.

I think the curve is probably a little more pronounced than you think. I have one that is nearly flat and one that i use the rocking motion that you're referring to.. both are santoku knives.

Some santoku knives have more "belly" than others. "Belly" is the amount of curvature that you're referring to. The best thing to do is go to somewhere that sells Wustof and JA Henckels and compare the santokus that each make. they probably have different belly variations on their santoku knives as well.

The other think I can think of is a kitchen axe, but those are basically a finer bladed meat clever.

Its def. a chef's knife. I would start with an 8 inch blade. Wusthof or JA Henckles are the two brands I would go with. Check out overstock you can even find them at tj maxx sometimes.
