Do players sign an actual contract when agreeing to an NIL deal?

If so, I wonder if we will ever see a breach of contract lawsuit in the future?

Yes. But the threat of breach is minimal.
If players dont hold up their end of the deal and breach the contract, the remedy is they don't get paid. And they won't care because they will be at another school getting paid.

Now the other way around could be interesting. Meaning a player signs a nil deal with a collective and then doesn't get paid because the collective doesn't have the money it claims to have.

Also, a tortious interference with contract claim could arise where collective A has a contract with player 1 and before that contract expires collective B encourages player to come to another school and sign a nil deal with collective B.
