I've done some reading and apparently I'd have to buy a whole new grill but was curious if any of y'all grill with wood and the how, what, when, where

Only a cowboy steak on a campfire. Just don't have the right equipment.
My dad had a firepit that had a grill attachment on a swing arm. I never could get the height right to consistently heat the damn steak and gave up.

Somewhat unrelated, but with my limited grilling knowledge, the next grill i get will be the sam's club combo grill. This dude is sweet.

I use wood brickets mainly but not just wood.

I have done some, and enjoy it. Dont spend a crapload of money on a stick-burner to try it out, build something like this:

The smoker above, could easily be adapted to grilling as well, especially a gaucho or Santa Maria style. I am a big fan of the Santa Maria style BBQ from California, and have done that with burned down wood coals and tri-tip steak. One of my favs.
