I have a Kamado Joe, which is the red, slightly cheaper version of the Big Green Egg. I had never used a Kamado, ceramic type smoker until getting this one. I like the way I can control temperature (low and slow).

I am trying to get into smoking and it is just me. I bought an electric smoker just for the simple fact I don't want to have to watch a fire all day and this will keep a fairly constant temperature.

Jack, I am no expert, but a couple of things to consider. With the ceramics, you can't get indirect cooking without a deflector plate. If you've never used one, I highly recommended it. I have a bayou classic cypress grill and found a rack on amazon that fit it perfectly. I bought 2 half moon pizza stones and use them as the deflector.
Something like this:
https://www.amazon.com/gp/aw/d/B00MOMHCN0/ref=pd_aw_sim_sbs_86_of_24?ie=UTF8&psc=1&refRID=KD3WWEFHTC46KBMMQ723

Spiral, the ceramic grills are very efficient at using less charcoal and holding their temperature over time. I ran across this fan and thermometer system and I'm thinking of trying it out. If it works as described, I may be able to do a large brisket without adding charcoal.

https://www.amazon.com/gp/aw/d/B00UI018B2/ref=mp_s_a_1_14?ie=UTF8&qid=1486302856&sr=8-14&pi=AC_SX236_SY340_QL65&keywords=bbq+fan

I've had plenty of food off an electric smoker and it's good, but it's not the same taste as it is with charcoal and chunk smoking wood.

I'm doing dry rub, apple/cherry smoked chicken wings with honey chipotle sauce. I'm sure the wife will be doing some dips and stuff, but I'm going easy as possible this year. As a Saints fan, I probably need to find a live chicken to sacrifice to spread some bad falcons juju.

Very simple- I use the Hooters naked wing recipe and sub onion powder for garlic powder:

Louisiana Hot Sauce
Butter
Pepper
Onion Powder

I do mine in the oven instead of frying. I have a pan with ridges so they crisp up and arent soggy as they would be laying flat on the bottom of the pan. Coat top half of leg- bake on 350 for 12-13 mins...flip- coat again. Bake another 12-13 mins. Done

I'm smoking baby back ribs on my 12 year old Brinkmann electric smoker. My family, friends, neighbors and I will put them up against anyone's "real" smoker. Dry rub ribs the night before then 210-220 for 2 hrs, wrap in foil for 3 hrs & lastly 1 foil-less hr... Mmmm 17'n great!

A ceramic grill with a diffuser and a BBQ guru temp controller is the end all for smoking and grilling. I have smoked brisket for 20 plus hours on one load of charcoal, nothing else will do that. If you want to learn on the cheap and don't want to be a va jay jay (electric)and use real fire, the Brinkman charcoal smoker that looks like a garbage can with two levels and a dome top is the way to go. It is pretty much light and forget but it has no insulation and uses a lot of charcoal for a big piece on meat. If you go electric, we will have to put your Man Card on probation!

I use a Backwoods Cubby.....I bought it used for $500 a couple of years ago from my friend who I assist in a few competitions each year....it is awesome and easy to use.....but they are higher than giraffes ass new....

http://mbbqsupply.com/Grills-Smokers/backwoods-chubby.html

HOWEVER.....This is the "new" Sweet Swine O Mine portable red box smoker.....exact same set up as the Backwoods Chubby, just a little bit smaller.....It was picked up by Mark Lambert after the original company/person just didn't have the marketing or desire to get it out there.....It is assembled in China though....but I have both and if I were to buy just a charcoal smoker for home use, I would go with this one....

This was my first 24 hour smoke. On the 18 hour smoke it was around hour 13-14 and I started freaking. You can wrap it in foil and the temperature climbs or you can just be patient. I choose patience.
