Exile for me. Sticky and Beggers hard to beat. The new album is what they should have returned to long ago and I think we would have seen even more great stuff while they were still in their prime.

"Can't You Hear Me Knockin" is my favorite song, and I think the quintessential song that is what the Stones are all about. Closely followed by "Honky Tonk Women", which is IMO, one of the greatest songs in rock history. Interesting enough, originally written and demoed as a country song by Mick and Keef.

The open G riffs of those were groundbreaking

i like the Stones--"STRIPPED". great Album. But going way back 12x5 was a game changer.

For me it's Exile with Sticky Fingers a distant second. Exile is that good.
I'm sure you Stones guys know this but "Wild Horses", off Sticky Fingers, was recorded in Muscle Shoals, AL. I still chuckle when I think about the Stones hanging out in Muscle Shoals in '69.
Here is a picture of the recording bill. I'd say it was money well spent.

Exile is a singular work. Let It Bleed and Sticky Fingers are right behind. If the single of "Honky Tonk Women" had been on Let It Bleed instead of "Country Honk," and the Ya-Ya's version of "Midnight Rambler" were on it, then it might jump Exile. Beggar's Banquet is pretty great as a spiritual precursor to Exile.
