No cooking tonight - it's my daughters birthday and has been finals week so she chose dinner.

Great local fav called Fancy Q. I had the Tiger and a Scorpion. Tiger was fresh local tempura shrimp and a seaweed topper. Scorpion was fresh local grouper topped in tuna. Paired it with a Kirin. Nice night.

Girl is having a party tommorrow, and requested my pulled pork - so I'm throwing one on the smoker in the AM.

Weekend in Starkville for me. Had the Big Fiesta burrito from Casa Bravo last night and that La Quinta breakfast to start the day today.

Did some experimental cooking for lunch today. I've been wanting some fried fish but I've been on a keto diet for 3 weeks. I'm not cheating until a good month under my belt. So I decided to experiment with coconut flour. I beat an egg, rolled a redfish filet in it, and dredged in coconut flour that I added salt and pepper to. Put some grape seed oil in a pan and got it hot. Did 2 minutes on each side and it was done. Learned something by trial today. Coconut flour burns quickly. To cook my filet I had to over brown the flour to my liking. The fish wasn't liked deep fried at all but it was good. The coconut flour has a sweetness on the back end that is great for seafood. I will be doing this again but next time I'll have the oven on 350. I'll give 30ish seconds on each side and finish in the oven. That will give me the color I really want for presentation purposes. I'm already thinking in my mind how good a 50/50 coconut flour/crushed pecan mixture could be.... That on my experimental to-do list also. In all, it was a good idea and can be a really good dish but my execution wasn't dialed in. I think I'll nail this one next time.

I can tell from Twitter that Beast is kicking all of our asses in food this weekend.

But, at least I smoked an incredible butt.

Thawed out some redfish. Wife wanted paneed. I wanted blackened. I did spiral cut zucchini instead of noodles since I'm on keto. Wife's paneed redfish was a 50/50 seasoned flour/parmesan cheese breading. Hot grape seed oil. Finished in oven. Sauce was chopped bacon saut?ed with white onion and red bells. As soon as that got good I added half & half (healthy kick), parmesan, & Cajun seasoning. Reduced it down. Sauce spooned over redfish and zucchini noodles. I topped the noodles and sauce with fresh chopped green onion. Garnished whole plate with fresh chopped parsley.

Damn beast, that's all impressive.

I'm moving all weekend, so zero cooking. Medicating a sore back with cold beer and baseball now. 3 more outs. HAIL STATE!

dredged in coconut flour

I have been baking with almond flour recently - never thought about using it as a fry batter....will have to check that out.
