Can the NCAA use Freeze's desire to seal his deposition from then NCAA as further evidence that he needs a show cause?

I would say the answer to both questions is yes.

Edited to add this: The real smoking gun is the attempt to restrict what can be asked. Sealing it wouldn't accomplish much as you pointed out.
