Takes advantage of that between snaps when they are changing the play.

You know when the offense is set and it looks like they are about to snap the ball, then for a minute everybody on both teams looks up at the sideline to see what play is going to be call. During that time of the defenses be linemen and linebackers rest, sometimes the defensive line stand up. This will be a perfect time to snap and run a play.

Plus, it would keep them on their toes for the rest of the game.

I've wondered why teams don't do this, though you have to be fully set before the ball is snapped, so there is at least a second or so for the defense to prepare.

The problem is that the offensive line has to be set in order to run a play, and it's during the time that the o-linemen are standing and not set that the defense checks their call and changes their defense.

You would have to be very deceptive to pull this off.
