View Full Version : Quick Lunch Shot

Had some chicken breast marinationd in Robert Rothcild Farm's chile lime marinade. My intention was to grill it and top with fresh made pico but I had no cilantro or lime so I freestyled just a bit. I ended up chopping some fresh tomatoe, red onion, & fine chopped jalape?o. Added a very little bit of olive oil, apple cider vinegar, and squeezed a lemon wedge. Let that mixture sit and marinate for a bit. Topped my chicken with my tomatoe salad pico substitute. Served with white rice and in a complete culinary mix-and-match, fried green tomatoes topped with crumbled goat cheese and a side of roasted red bell pepper sauce.

Dang son. Fried trout is one of my favorites. How do you fry your japs?

It's actually just jalape?o slices. I just use the fish fry. Nothing special, but I love jalape?os. You can't see them in the pic, due to all the hush puppies. We over shot on those just a bit...

Lime is freaking great with chicken or turkey, preferably smoked.
