This one should be good. Weather looks to be good. After work tonight and tomorrow morning, I'll be in the bulls bay trying to gather some trout, reds, and whatever else bites. Should be plenty of cooking out

nothing spectacular. miller lite, dogs and burgers, and the pool all day for two days with the kids.

seafood paella on the charcoal grill. shrimp, scallops, clams, chorizo, chicken, and tilapia. It's phenomenal.

Got down to the coast at 730ish. Decided to walk across the street to the beach and wade out and cast a few. Wanted a redfish. Had 1 hookup and got off and felt like a good fish. Something drilled my cork a cpl cast later. As it was getting hard to see I caught a nice sized hard head on a soft plastic. Not want a wanted but a tight line nonetheless. Now I'm watching the heat game in the condo drinking a coord light summer brew.

Oysters on the half shell, chargrilled oysters, mixed shrimp and oyster poboy and a couple West Coast IPAs to wash it down.

Fished our butt off today. Slow day but we grinded it out fir a respectable mess of fish. 14 specs & 4 reds. Drinking a miller fortune and bout to go to dinner

A friend cooked up 12 racks of ribs and I washed them down with some Goose Island Endless IPA

steak, boneless pork loin, kielbasa sausage, (sometimes chicken) red, yellow, and orange peppers, mushrooms, Vidalia onion, purple onion.

Friend cooked it. I watched so can give some general info.

It has roasted tomatoes (grilled until the skin falls off and the set aside), sliced onions and peppers sauted and then set aside. The core meats were shrimp, mussels, the monster New England mussels, clams, tilapia, chopped chicken breast, and andouille (he usually uses chorizo though). He roasted he tomatoes then added some seafood stock and saut?ed the peppers and onions. he added a lot of broth throughout and never covered it. The timing of the meats is key. he'd cook some, set them aside, and then put them back in later. I know he started with the chicken and sausage, then the fish, and then the shellfish before adding the shrimp last. The Spanish rice went in after the fish and chicken and sausage were cooked and removed. the timing of everything is critical. he cooked the rice perfectly to where it was nicely crusted around the edge of the pan.

I wish I could be more specific but the guys a guru on the grill and is simply out of my league.

I know he used saffron too and maybe some paprika or at least a paprika based dry spice as it was finishing.
