I took first Place in Ribs, Pork Butt and Chicken in my competition of the year. Do any of you guys compete?

I supposed to join a group this Fall from time to time to compete. I'm pretty damn good at ribs and pork butt, not so much with chicken altho I'm going to try to Myron Mixon's trick of putting them in cupcake pans

I helped a group last year. I was more a runner and helped manage the booth than a cook, but I did a little of both. It's fun staying out there for a couple of days. Absolute blast.

I make some great pork ribs, never competed though. What people in Texas call BBQ and what we call BBQ are two totally different things.

WTF is pork butt? Was this a local deal or what?

Explain the chicken, what you did etc. I'm always interested in that.

Pork butt is the Boston Butt portion of the pork shoulder...aka the "money muscle"

Other than Texas being more about brisket and beef and MS being more about pork, how is it different?

We've used the pans, but they stick in there sometimes.
Just use a small aluminum pan and put the thighs on there with the margarine.

De-bone thighs, put cut red and green peppers and Monterrey jack cheese inside and roll up.
Sprinkle dry rub on top, then a generous amount of margarine.
Smoke until almost done then take out of pan to finish directly on the grill with mop sauce.
