Last weekend my dad did some fishing and got 1 triple tail. He decided not to freeze it and had me cook it today. I lightly salted the fish and squeezed some lemon. Then I combined equal parts flour and Parmesan cheese. Covered the fish in the flour, parm mixture. Heated some olive oil (the burner flame at 70%) and just as the oil started the smoke, added the coated fish to the pan. 2 minutes on each side. Plated with some parsley for color and lemon wedges. Freaking outstanding! You could have added a sauce (crab, shrimp, etc...) but we had a fresh fish and didn't want to over do it. A lot of folks get intimidated cooking fish but this whole preparation included salt, flour, parm, & lemon. Easy as hell.
