    Weekend Cooking & Drinking Thread: Playoffs Edition

    Got some good NFL this weekend and besides that it's cold as hell. I know I'll probably cook something Saturday night and then we're having a 1 year old birthday party on Sunday.

    Beardo, did that braised oxtail yesterday and it was ridiculous. It was better today. For whatever reason the herbs were much more prominent after sitting in the fridge overnight. I'll post some pics at some point.

    Here’s 2 pics of the oxtail. First is when I had the cab reduced down and I added back the seared meat and put fresh herbs on top before it went in the oven. Second pic is plated.

    I must admit, looks delicious. Have not posted here in awhile, I am still kicking. However, the wife has decided that fat boy here has gotten to fat, so the whole damn house is on a diet. (Except her, she is 120 lbs). So, I am relegated to just reading about the great eats for now. But, I still have the Bullets and Woodford very close by. So eat up boys, and let me know how it taste. Down 10 lbs so far, with 65 to go.

    Looks great, Beast. Isn't the tail awesome? It's got great fat content, and anything cooked on the bone is going to be a +.

    Something I like to do with my beef bourguignon, is right before the stew is finished, saute up the fresh mushrooms with some lardons of bacon and whole tiny cipollini onions. It adds some nice texture and the mushrooms soak up the bacon fat, and onions get super sweet and caramelized.
