What's the benefit? Keeps the water colder longer? I've heard using salt water before but didn't know why

Best of my knowledge is it keeps the water closer to freezing temperature.

The salt will melt the ice and when it melts it will be cold water with a lower freezing point. So then you have very cold water & ice completely surrounding the fish (or beer).
