stopped at a bbq stand in the hood in memphis on the way home and got some grilled wings. was my first time to try the place out because well the time changed and to put it simply it ain't exactly a great location and it s daylight at this time. I will be back heck maybe tomorrow for ribs. I also picked up a cheap single malt bottle of scotch. 40 dollars cheapest i could find... whiskey/bourbon is too sweet for me these days... i suspect there will be some more food involved and possibly some irish celebrations

The wife wanted something different. I'm sure I'll get jobbed on the subject line. Anyway, loaded baked Italian sandwiches, clam chowder, lobster bisque, coors light and a bottle of JR Ewing to sip on. If we get through that and do a little time traveling, got a bottle of scotch and tequila in case it gets a little crazy.

Backstory: Our meals here are contracted by a logistics provider, not unlike KBR in the old days. This Iraq, however, is not like previous iterations. We are on the CHEAP, as we are here "helping" the Iraqis, not actively fighting *cough*. So our chow hall is too small for the population it serves, and we have one of the better ones here. The way they make burgers is to cook them early in the day, then hold them in hot water, putting a short "sear" on them prior to serving.
Disgusting is too nice a word to use for the texture and taste.
Enter the United States Embassy, Baghdad, Iraq. The same contractor that provides our meals also provides the Embassy's, but they apparently have the bigger fridge and get the A-team staff. They make a griddle seared, cooked to order burger, hand formed patty, cheese, mushrooms, and fresh baked bread bun. Yea, it is as good as it sounds. Especially when all you can get on our side of the street is a boiled burger shaped patty that make McD's look like Shake Shack.
Pretty crazy what a luxury a good hamburger can be. Oh what we take for granted....
On the way home from Starkville yesterday I took the scenic route down Old West Point Road. Stopped at Anthonys in West Point and sat at the bar for about an hour watching games on the tube. Me and the Mrs got a table, she ordered the blackened catfish with crawfish sauce and I ordered the special, fried oysters and grilled scallops over linguini tossed in a Frank's Red Hot cream sauce with blue chees crumbles. We washed it down with several Lucky Town Pub Ales. I highly recommend all of the above.
Tabasco, ALWAYS have Tabasco...Makes even Chicken a la King taste good.

Slow cooking some ox tails tomorrow with mixed vegetables. Thinking about either salt curing them overnight or searing on skillet before slow cooking. Any suggestions or thoughts either way?
Had a few Modelos down the road at the beach today. Now standing in line for some crawfish at ClawDaddy's.

Got some nice lemon sole fillets from my fish monger today, and made the lady and myself a nice dinner for two.
So we've got roasted fish, on a bed of crispy potato, with a sauce of red pepper (red bells, vermouth, shallots, white wine vinegar; pureed, sived, then mounted with butter), and sauteed carrots, zucchini, and baby leeks on either side of the plate. I was pretty happy with how this turned out.

Our neighborhood and downtown had a day after St Paddys pub crawl. Been drinking since 2:00 - interspersed with bangers and mash, corned beeef and cabbage, and lots and lots of alcohol . Not a bad Saturday
