Pic #1- That's the redfish on the half shell (leave skin and scales on 1 side) before I cooked it marinating. It was in olive oil, a lil cayenne pepper, paprika, thyme, garlic, chopped yellow onion rings on top. The fish filets were both seasoned with sea salt and fresh cracked pepper. A hot grill was waiting...
Pic #2- This is speckled trout that I baked on a non stick pan in the oven at 350. Filets were seasoned w/ Tony C's cajun, a lil rosemary/garlic, spooned w/ lemon butter, and lightly dusted w/ paprika.
Pic #3- This is a mix of speckled trout, redfish, and black drum filets before they were fried. All were dipped in buttermilk and then coated with Zateran's fish fry batter.
Pic #4- Finished product on the grilled redfish on the half shell. It was a major hit. You take the filets out of the marinade. Place them flesh side down for 3 minutes. Flip and pour remaining marinade and arrange the yellow onion rings on top. After 15 minutes I moved it to the top rack for 10 more minutes. When they were done I spooned a melted butter, fresh chopped parsley, and lemon sauce on top.

Pic #6- Finished product on the fried fish. Was da bomb yall. I put a lil louisiana hot sauce and tartar with mine.
Pic #7- These were the homemade squash puppies we had. No idea how to make them. They're my mother in law's recipe. I was just handed a bowl of batter and I dropped them in oil. Best hushpuppy Ive had in a while.
Other info- We also had baked beans, coleslaw, and french fries. Cousins brought over 2 homemade cakes for dessert. It was almost 15 of us all together. Great time. Nothing like cooking out for your fam what you filled the freezer with.

funny, we had fried squash patties last night too. a little different than the hush puppies, but same concept in guessing.
